YAY! The long awaited, much anticipated weekend is finally here! However, I am spending most of it in bed sick. So sad! We were planning to go to McKinney's first ever Oktoberfest, but it doesn't look like we'll be making it to that. I was really looking forward to it, but I guess there is always next year. We're looking forward to Oktoberfest 2009.

Now that it is technically fall, even though it's still as hot as ever in North Texas I just wanted to share one of my favorite fall recipes with you. This recipe was given to me by my best friend Laura! It is fabulous any time of year, but we especially enjoy it in the fall and winter! It is her recipe for Chicken Tortilla Soup! YUM! It makes A LOT and is great for leftovers and lunches. Here are some of the ingredients...

Here is the recipe for Laura's Chicken Tortilla Soup if you would like to make some for your family!
INGREDIENTS:
1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons cumin
2 cans (28oz.) chopped tomatoes
2 cans chicken broth
1 cup whole corn kernals
1 cup white hominy
1 (4 ounce) can chopped green chili peppers
1 can black beans
1/4 chopped cilantro
1 rotisserie chicken (or chicken breasts)
JUST BEFORE SERVING TOP WITH
tortilla chips
cheese
green onions
DIRECTIONS:
In a large pot heat oil and saute onion and garlic until soft. Stir in chili powder, cumin, tomatoes, and broth. Bring to a boil and simmer 5-10 minutes.
Stir in corn, hominy, beans, green chiles, cilantro and chicken. Simmer for 10 minutes.
Add more chili powder and cumin if needed. Sometimes we also add a bit of Curry powder!
Top with tortilla chips, cheese and chopped green onions.
