Yes, Vegans CAN eat at FREEBIRDS!



Today was a really great Saturday.  Of course my heart is with little baby Harper and I have been praying for the Stamps family throughout the day.  Thankfully it looks like things are improving for her as we continue to keep praying.

Here in McKinney the weather was gorgeous in the mid 60's with beautiful sunshine!  We woke up, Kevin gave me some chiropractic adjustments I was desperately in need of (thank you honey!), we went and worked out at the gym and THEN....

We had the best vegan meal I have ever had!


We went to Freebirds, and YES you can be a vegan and eat at Freebirds!

We ordered the Ancho Chicken Salad- NO chicken, add rice, black beans and pinto beans and also a little roasted garlic and red onions served over a wheat tortilla!

YUM!!!!!!


I was in heaven!  It was so delicious!  Kevin and I were stuffed and it was only about $13 for both of us to eat with waters to drink!  We ate most of the salad, then at the end we rolled up the remaining salad into the tortilla to make a burrito, AMAZING!!!  (FYI-they did sprinkle a LITTLE bit of cheese on here, but it wasn't much.  We forgot to ask them not to!)

UPDATE ON THE VEGAN DIET
We took a break in December due to all of our traveling and holiday activities!  We are getting back on track now and doing good! Here is our progress so far...

KELLY- lost 11 pounds so far, 3 inches in her waist
 
KEVIN- lost 16 pounds so far, 3 inches in his waist

On another note, the diet has also been the answer to my prayers concerning a health condition I mentioned in earlier posts.  

In a nutshell, my cycles were all out of whack for a year.  I went to an OBGYN.  They did lots of hormone tests, blood tests and sonograms and found out I had 3 ovarian cysts and I was disgnosed with PCOS b/c of my FSH and LH levels in my blood.

This was the MOST devastating news I had heard in my life.  For years I have dreamed of being pregnant, being a mom and having our own children.  I will never forget the feeling I had as I was crying out of control trying to explain all of this to Kevin.

I was determined to disprove this diagnosis.  The doctors told me to go back on birth control to help manage the cysts or go on Clomid to get pregnant.  I was like, NO WAY!  I need some time to research this before I do anything.  I try to avoid prescriptions at all times.

I engrossed myself in online research and came to the conclusion that changing my diet could be the answer to my problems.

After 2 months as a vegan from mid-October to mid-December my cycles regulated for the first time in a year, I was ovulating and my cysts went away!  AMEN!  Thank you Lord!  

At my last Dr. appointment, the doctor said that it looks like I am getting regular and my body is getting back on track! Thank goodness because the next step that one doctor recommended was surgery to remove the cyst, which terrified me!

This diet has been the answer to our prayers in so many ways.
