What are you having for lunch today?



I spent this afternoon making some meals for us to eat this week.  I made Rainbow Corn Salad to eat for lunch!  It is SO delicious!  It is also a great way to get in all your veggies each day!

Here is what you need...

2 cups corn niblets
1 cup diced orange pepper
1 cup diced red pepper
1/2 cup green onions, chopped
1 cup diced celery
1/4 cup parsley
1/2 tsp Celtic Sea Salt
1 tsp cumin
dash of cayenne pepper

*Dressing*
2 Tbsp olive oil
2 garlic cloves, minced
3 Tbsp lime juice

Chop up all the veggies and put them in a bowl,

Add your seasonings and dressing,

Stir it all together real good and add a little pepper and italian seasoning if you wish,

Then divide it into tupperwares and your lunch in ready to go for 3 days!  That is what I'm talking about!

I love to eat this with celery sticks topped with organic, unsalted almond butter!  YUM!

Yesterday our little love got a bath!  It was one of the best baths she has ever had!  If you spoil your dog too much like we do, then you should definitely try Origins Doggy Shampoo!  

My mom and dad gave it to Bindi for Christmas and it was amazing!  She is so shiny and silky!  After her bath she was so excited she was running around the house at full speed and toppled over Pumpkin!  It was quite a sight to see!
