"Honey, I'm Home!"



Not much other than work, work and more work is going on this week!  I haven't had to stay this late since school began back in August!  Today consisted of being at work for almost 10 hours, then running errands in the rain and having my umbrella blow inside out and getting all wet!  So you can imagine my delight when I came home to this as soon as I walked in the door!

Kevin made Veggie Lasagna! This was the perfect dinner after a long, cold, wet and rainy day!  This was his first time to make it and he did an AMAZING job!  It was delicious!  And, the great news is that there is plenty leftover so I don't have to worry about cooking tomorrow night since we have Open House at school!

If you want to try it, here is the recipe for our Vegan Veggie Lasagna!

INGREDIENTS
Whole Wheat lasagna Noodles
2 jars organic pasta sauce
canned organic diced tomatoes with garlic and onion
1 medium zucchini, sliced
2 yellow squash, sliced
1 small onion, diced
1 cup baby spinach
1 cup red pepper diced
2 cups organic broccoli florets (sometimes we use this, sometimes we don't)
2 cloves minced garlic
1 teaspoon sea salt

DIRECTIONS
Coat 9 x 13 inch dish with olive oil.

Drain and pour the can of organic diced tomatoes with garlic and onion on the bottom of the dish.

Layer noodles, zucchini, squash and onion.

Pour i jar of organic pasta sauce over the above vegetables.  Then put another layer of noodles over the sauce.  Put the following vegetables on next:

baby spinach
red pepper
broccoli

Mix 2 cloves of minced garlic and 1 teaspoon sea salt with the remaining jar of sauce.  Pour over veggies.  Bake about 1 hour covered in a 350 degree oven.

Let stand before serving!

Sometimes it still has a little liquid at the bottom from all the veggies when they cook, but it's still yummy!
